Hey Everyone! Long time no talk/blog! Hope everyone had a great holiday and is starting the new year off right.
Today I wanted to post about a little gluten free creation I came up with, and I’m sure I’m not the first to come up with it either!
It’s the ‘Cookie Brownie’ and is simple as anything I’ve ever tried.
1 pack of the Betty Crocker Gluten Free Brownie mix
1pack of the Betty Crocker Gluten Free Chocolate Chip Cookie Mix
make each mix individually then take a brownie pan and add the cookie dough on the bottom, and the brownies on the top and plop in the oven for about 23mins. Consistently check on it throughout the time it’s in the oven.
Tip: If your pan is to big and you can’t evenly put cookie on bottom, brownie on top, swirl them together, it’s just as good.
Take out of the oven, test and enjoy!

This past Thursday was my first Thanksgiving gluten-free. Man did it feel good to know that I wasn’t going to feel sick and in excrusiating pain after I ate this amazing meal.
Before you are diagnosed with celiac or whatever your food intolerance etc. you start to not enjoy eating anymore because everything your eating is causing you dabilitating pain. You don’t know what is causing that pain though. I alwaus love good.old.family.time surrounded by food because we are Italian. We Italians LOVE to eat!
So. My mom (thanks mom) made this a.m.a.z.i.n.g Gluten-Free stuffing, my absolute favorite Thanksgiving food with Udi’s bread!
I also had gluten-free turkey without gravy just because we didn’t have time to make a second-gravy! I also had mashed potatoes and that was just dinner. The ‘finger-foods’ were my aunts amazing Taco-Dip as well as crab-dip and everything else that I can’t recall.
I just thought I’d give you guys a little update on my first gluten-free holiday. I can’t believe how close Christmas is getting. It’s already December 1st. This will also be my first gluten-free Christmas (obviously) so if anyone has any good tips,advice or great holiday cookie,cake,pie,dinner etc. recipes please comment below and let me know!

It’s been a while since I’ve updated this blog. I am back and I’m aiming to do 1-2 new posts per-week.
It’s a little late but last month was my 6month “anniversary” of being gluten free and getting diagnosed with celiac disease. It is also the “anniversary” of the end of my brutal pain and the worry of not knowing what was wrong.
Those who don’t have celiac may not understand why I’m blogging about this and how it is almost like “phew! the worry is over , and I can enjoy my life, healthy”.
At first I was very confused, upset and didn’t understand anything about gluten and celiac disease. Now that it’s been six months and I have found an amazing e-community on twitter , Facebook and blogging that has been nothing but encouraging and helpful. Thank-You to everyone that has helped me get through the beginning stages of living gluten-free.
Eating out, going on trips and just living life with celiac has become second-nature! I have found that as time has passed I really don’t crave any of the “dangerous” foods anymore. One big reason for that is, I think is due to the fact that I know I can make a new gluten-free version of almost everything.

Todays review is going to be on Schars Gluten-Free Fucilli pasta.
This is Fucilli rice pasta. It is amazing how far rice pasta has come. It used to be slimy, crumble and break apart. Nope, not this one, welcome to the new century!
You cook it like any other pasta, boil water, stick pasta in & wait the recommended 8-10 minutes, drain and enjoy! I stick it in for 9minutes and it’s perfect!
This pasta has the same texture as “normal” pasta although it is a little bit more chewy but other than that it tastes I would say 98% normal. It has a little bit of a back-taste but nothing that would keep me from eating it again. In fact, I have had this pasta every single time we have Sunday night dinners! Top it with your favorite pasta sauce and EAT!

Early today I asked on twitter what your favorite g-free bread was because I have only found one bread that was OK. I got a couple responses from people raving about this brand “Udi’s“. I went to Whole Foods and got it. I got the Whole Grain bread but they also had a White Sandwich bread. It was in the freezer section with the other G-Free stuff and when I got home it was room temperature. I took some out and tried it. Wow, this is the best gluten free bread I have had to date!Okay, it’s only been 3 weeks but. . . still I have been through a good amount of bread and this really is the best bread I have had to date!
The bread has no back taste etc. like many other gluten-free breads. It is flexible and has little holes like real bread, you gluten-free eaters out there know how hard that is to find! My favorite advantage to this amazing bread is . . . . you DON’T have to toast it or microwave it to make it edible and it’s not chewy!
